Our Story

 Let’s Taco Bout It” opened its doors in February 2016. However, our story began in 1991, when our patriarch, Rafael Jimenez Sr., started offering favorite family recipes to our community in a taco truck. Think of that innovative approach? He was using a food truck BEFORE it was all the rage. Thanks, dad! The business became so popular we moved operations into a fully functional kitchen with seating available to accommodate the ever-growing list of faithful customers. Thus, Taqueria Jimenez was born. To this day, we operate our parent company in the heart of Reading, Pennsylvania still offering authentic Mexican food almost 30 years later! 

 “Let’s Taco Bout It” is a nod to both our rich Mexican roots and our love of pop culture. You will notice our restaurant is adorned with Lucha libre (wrestling) theme posters exhibiting “El Santo.” Mexico’s most famous and recognizable (although never without his mask) luchador. “El Santo” is an icon and has been referred to by many as one of "the greatest legends in Mexican sports.” Hence, it made sense for us to adopt this slamming theme for our restaurant, because we feel our tacos are legendary and you’ll agree. If not, we can Taco Bout It. 

Lucha libre also inspired our menu, adapting names from the movie “Nacho Libre.” Try ordering the “stretchy pants”or the “anaconda squeeze” without laughing. If you haven’t watched, you’re missing out. We love the light-hearted humor and it married so well with our restaurant concept and powerbomb menu options.
